Since 2003 this Beltline double act has let Calgary choose its own volume \u2014 and either way, the steak arrives correct.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"The_Concept\"><\/span>The Concept<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Two decades in one location is an eternity in this city&#8217;s restaurant scene, and Vintage has spent them polishing a single idea: the classic North American chophouse, executed without shortcuts. Beef is the backbone \u2014 dry-aged cuts up to Wagyu territory \u2014 while the cellar holds more than six hundred labels and has carried a Wine Spectator Best of Award of Excellence for years on end.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"What_to_Order\"><\/span>What to Order<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>The dry-aged prime ribeye is the house thesis: funkier, deeper, beefier than its wet-aged cousins. Wagyu appears for the committed, classic chophouse sides \u2014 creamed spinach, potatoes several ways \u2014 do their supporting work, and seafood starters keep the table balanced.
