Model Milk: The Dairy That Became a Destination
The name is not branding whimsy — this art deco brick building on 17th Avenue really was the Model Milk dairy, the first in Alberta to send fresh milk out on delivery trucks. Since 2011 it has pasteurized something else entirely: refined comfort food that helped teach Calgary its own restaurants could be nationally famous.
The Concept
Chef Justin Leboe arrived with fine-dining credentials and a subversive plan — take the food people actually crave and rebuild it with a tasting-menu skill set. The menu changes constantly, but the spine stays: local, seasonal, comfort refined to a point. The formula earned Model Milk a long run among Canada’s most celebrated restaurants and spawned Pigeonhole, its acclaimed sibling nearby.
What to Order
The Southern fried chicken is the legend — reinvented every few months, drifting from Nashville-hot heat to a chorizo glaze with basil fry bread, always worth ordering for the table. Around it orbit sharp seasonal plates, house pastas and desserts that take the dairy heritage as a dare. On Sundays the kitchen throws the menu out entirely for a family-style Sunday Supper — a themed set menu that regulars plan weekends around.
The Space
Rustic-hip in the original sense: exposed brick, salvaged wood, filament bulbs dangling over a long bar, mezzanine seats looking down into the open kitchen’s glow. The room carries its industrial past lightly — loud enough to feel alive, warm enough to stay all evening.
