The Concept
Kang sharpened her knives in some of Calgary’s most respected kitchens before taking the pass here, and her menu reads like a passport with extra stamps: Mediterranean structure, Asian nerve, her Korean heritage supplying the plot twists. The Syndicate Hospitality group built the west-downtown room to match the food’s ambition, and national best-of lists took notice within a couple of years of opening.
What to Order
The salmon crudo with radish, roe and gochujang is the thesis statement — cool, hot, saline, precise. The bison carpaccio with grana padano and mustard seed reworks a trattoria classic on Alberta terms, the potato mochi is the side dish people text each other about, and the crusted halibut with bok choy and miso cream headlines the mains alongside the Rougie duck breast. The eggplant with mushrooms and crispy chickpeas quietly steals meals from meat dishes.
The Space
A greenhouse crossed with a supper club: crystal chandeliers overhead, plants cascading from every ledge, warm wood shelving and pockets of seating that feel like separate rooms sharing one garden. It photographs extravagantly and somehow still works for a quiet Tuesday dinner.
